Banana Nut Bread, Gluten Free

A good moist gluten free tea bread. I like to store the bread overnight then slice and spread with butter the next day.


Serves: 12 

  • 90g butter or margarine
  • 185g sugar
  • 2 eggs, whisked
  • 500g bananas, mashed
  • 1 3/4 cups (220g) gluten free flour
  • 1/4 teaspoon bicarb soda
  • 125g mixed nuts, chopped

Preparation:20min  ›  Cook:1hour15min  ›  Ready in:1hour35min 

  1. Grease and line a bread tin.
  2. Cream butter and sugar until pale and fluffy. Add eggs a little at a time beating after each addition.
  3. Add bananas and beat again.
  4. Stir in the flour, bicarb soda and nuts.
  5. Put in the prepared tin and bake for about 1 1/4 hours at 180 degrees C until well risen and firm.
  6. Turn out onto a wire rack to cool.

i made it this way first and found it a little dry so i added a little more butter abd 3 teaspoons of water and in total i put 3 bananas in i also only put 100grms of sugar very nice have made it twice and i dont really bake all the family loved it. - 08 Feb 2012
