Banana, Cherry and Walnut Cake

The cherries in this cake provide a wonderful spark of colour. The yoghurt keeps it light while the nuts give a crunch.

- 110 g butter
- 230g self raising flour, wholemeal or white
- 110g brown sugar
- 75g walnuts, roughly chopped
- 50g glace cherries
- 3 ripe bananas, mashed
- 150ml natural yoghurt
- 1 egg

- Rub butter into flour then stir in the sugar and 50g of the walnuts.
- Soak cherries in hot water for 1 minute to remove the syrup then dry them on a kitchen towel. Cut in half and add to the flour mixture.
- Mix together the mashed bananas, yoghurt and egg then add to the dry ingredients to form a stiff dough.
- Spoon into a greased and lined bread tin. Level the surface and sprinkle with the remaining walnuts.
- Bake at 180 degrees C for 1 1/2 hours or until a skewer inserted in the centre comes out clean.
- Leave to cool in the tin for 15 minutes before turning out onto a wire rack to cool completely.
