    The cherries in this cake provide a wonderful spark of colour. The yoghurt keeps it light while the nuts give a crunch.

    Ingredients
    Serves: 12 

    • 110 g butter
    • 230g self raising flour, wholemeal or white
    • 110g brown sugar
    • 75g walnuts, roughly chopped
    • 50g glace cherries
    • 3 ripe bananas, mashed
    • 150ml natural yoghurt
    • 1 egg

    1. Rub butter into flour then stir in the sugar and 50g of the walnuts.
    2. Soak cherries in hot water for 1 minute to remove the syrup then dry them on a kitchen towel. Cut in half and add to the flour mixture.
    3. Mix together the mashed bananas, yoghurt and egg then add to the dry ingredients to form a stiff dough.
    4. Spoon into a greased and lined bread tin. Level the surface and sprinkle with the remaining walnuts.
    5. Bake at 180 degrees C for 1 1/2 hours or until a skewer inserted in the centre comes out clean.
    6. Leave to cool in the tin for 15 minutes before turning out onto a wire rack to cool completely.
