Banana and Apricot Slice

    2 hours 20 minutes

A really moist and surprisingly healthy snack. Use any seeds or nuts that you have. I have used rolled and rye oats.

    4 people made this

    Serves: 12

    • 100g butter (or butter substitute)
    • 2 tablespoons golden syrup
    • 1 tablespoon agave or date syrup
    • 50g seeds, pumpkin, sunflower, etc.
    • 35g almonds, roughly chopped
    • 150g rolled oats
    • 100g dried apricots, roughly diced
    • 30g dried dates, roughly diced
    • 2 bananas, mashed (approximately 250g)

    Preparation:1hour50min  ›  Cook:30min  ›  Ready in:2hours20min

    1. Preheat oven to 170 degrees C. Line and grease a 20cm square baking tin; set aside.
    2. In a saucepan over a low heat melt the butter, golden syrup and agave syrup.
    3. In a bowl place the seeds, almonds, oats, apricots and dates. Mix in the mashed bananas.
    4. Add the melted mixture and combine. Turn out into prepared tray. Flatten to roughly 1.75cm in depth. Do not worry if it does not spread across the tray. The mixture will bake in whatever shape you create.
    5. Bake for 20-30 minutes at 170 degrees C. Allow to cool in the tray for 10 minutes then cut into serving sizes. Turn out onto wire rack to cool completely.

fantastic recipe! Doesn't take 21/2 hours- about 10 min prep, 30 mins cook. Delicious soft flapjacks, tasty and healthy, absolutely fabulous for luchbox snacks and on the go.  -  21 Sep 2011  (Review from Allrecipes UK & Ireland)

Really enjoyed making these, and using such wholesome ingredients. The end product tasted great, and not too sweet either, so felt really healthy and satisfying. Thanks for sharing the recipe.  -  19 Apr 2012  (Review from Allrecipes UK & Ireland)
