Banana, Strawberry and White Chocolate Cake

    Deliciously moist wheaten cake with hints of banana, strawberry and white chocolate. If you prefer you can make this into scones rather than a loaf.

    Serves: 6 

    • 400g wholemeal flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 100g butter
    • 180ml buttermilk
    • 100ml vegetable oil
    • 2 tablespoons demerara sugar
    • 10 strawberries, hulled and diced
    • 2 bananas, mashed
    • 60g white chocolate chips, to taste

    1. Grease a medium depth cake tin or baking tray to make scones instead.
    2. Preheat oven to 180 degrees C.
    3. In a large bowl mix wholemeal flour, baking powder and salt.
    4. In a separate bowl cream the butter and sugar. Add this to the dry mixture and mix well.
    5. Add oil and buttermilk then stir through evenly.
    6. Add the strawberries and bananas. When this is evenly spread though mixture add the white chocolate chips.
    7. Cover hands in flour and lightly flour work surface. Take the dough and knead it softly for a minute or two. Place in cake tin or roll out and make scone like rolls.
    8. Cook for 40 minutes. Reduce to 150 degrees C then cook for another 20 to 30 minutes.
    9. Leave to cool in tin for 10 minutes before turning out and leaving to cool further on a wire rack.
    10. Delicious toasted with thin spread of margarine or jam.

    I thought I would allow myself indulge in this different wheaten bread recipe after assembling your grill chicken salad!this bread is spongey and almost like cake- love it and it is definitly one for the niece  -  28 Sep 2008  (Review from Allrecipes UK & Ireland)
