Fennel Baked Fish

    Fennel is a great accompaniment to fish in this simple meal. It works with most fish that keep their shape when baking.

    Serves: 2 

    • 125g fresh fennel, finely diced
    • 1 lemon, zested
    • 1 teaspoon dried thyme or tablespoon fresh diced thyme
    • 1 tablespoon olive oil
    • 1 tablespoon balsamic vinegar
    • 2 white fish fillets weighing about 500g (cod, halibut, etc.)
    • 3 rashers unsmoked bacon

    1. In a small bowl mix the fennel, lemon zest, thyme, olive oil and vinegar.
    2. Spread the mixture on one fillet then place the other fillet on top.
    3. Plastic wrap the fish and leave in the fridge for half an hour. Meanwhile preheat the oven at 200 degrees C.
    4. Remove fish from fridge and wrap in bacon.
    5. Bake in an ovenproof dish for 20 minutes in the preheated oven.

    I put this mix inside a whole seabream and some on the skin (left out the bacon) and barbequed it for about 10 mins. Scrum-diddly-umptious.  -  22 Dec 2015  (Review from Allrecipes UK & Ireland)
