A great dish as a light dinner with a green salad. I have used heaps of different cheeses with this and it's always good. Remember when seasoning that there is salt in the bacon and cheese, so don't over salt.

Serves: 8
250g puff pastry
2 large potatoes, sliced very thinly
1 pinch sea salt and freshly ground black pepper, to taste
Line a baking tray with a sheet of puff pastry bunching up the sides. Lay the potato slices over the puff pastry slightly overlapping each slice. Sprinkle with sea salt and pepper to taste.
Sprinkle the diced bacon or pancetta over the potatoes. Cover with grated cheese and diced rosemary.
Finally; brush the sides with the whisked egg.
Bake in the preheated oven for 30 to 45 minutes until cheese is browned and potatoes are tender.
