These wraps are tasty but simple and quick to prepare. Ideal for packed lunches, picnics or a quick meal at home.
If you can't find smoked tofu use a block of plain tofu and coat the strips in fajita seasoning or similar mixed spices.
I couldn't find smoked tofu anywhere, so I marinated the drained tofu strips in a mixture of sunflower oil, cumin, garlic, smoked paprika and chilli.
