Chocolate Rum Balls

    This recipe is an amazing chocolate treat ideal for special occasions like Christmas, Valentine’s Day or Mothers Day.

    Serves: 20 

    • 2 cups (220g) malt biscuits
    • 1 cup (160g) sultanas
    • 75g desiccated coconut
    • 120ml lemon juice
    • 3 tablespoons rum
    • 1 tablespoon cocoa
    • 4 tablespoons crushed nuts and/or desiccated coconut and/or chocolate sprinkles for coating

    1. Crush biscuits into fine crumbs resembling breadcrumb consistency.
    2. In a large bowl mix biscuit crumbs, sultanas, coconut, lemon juice, rum and cocoa. Mix well.
    3. Roll into balls about 2 to 3 cm in size.
    4. Roll the balls in either coconut, crushed nuts or chocolate sprinkles depending on your taste.
    5. Chill for 1 hour to set.

    This is a delightful change from the usual condensed milk balls. The mixture was really dry though, so I added in a bit of melted butter to hold it all together. I also put in a third cup of sultanas, dried apricots and crystallized ginger instead of the whole cup of sultanas. They are really delicious and tangy.  -  15 Dec 2014
