A lovely little starter for dinner parties or as a summer snack. They can be eaten by themselves from a platter or accompanied with some salad and bread.
Wrap each asparagus piece in a piece of pancetta. Tip: wrap from the top downwards, spiralling the pancetta around the asparagus.
Oil a baking tray then place the pancetta wrapped asparagus on this.
Drizzle the olive oil lightly over the pieces (this will help crisp up the pancetta).
Place in a hot oven, middle shelf for around 10 minutes; check frequently. Remove from the oven when the asparagus feels softer and the pancetta is crisp.
