Mixed Fruit and Oat Bars

This is a basic recipe you can have fun with. My favourite is banana and milk chocolate; you need to freeze the banana beforehand as it will go mushy when cooked!


Serves: 24 

  • 200g fruit of your choice e.g. banana, apple, apricot, finely diced
  • 200g chocolate, finely diced
  • 200ml golden syrup
  • 170g butter or margarine
  • 1/4 cup (60g) caster sugar, white or brown sugar may be used
  • 3 cups (450g) rolled oats

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Dice and freeze chocolate and banana, if using, for about 60 minutes (optional).
  2. Preheat fan oven to 160 degrees C. Place foil onto a oven tray and grease.
  3. Place the golden syrup, butter/margarine and sugar in a saucepan and heat gently until butter/margarine has melted.
  4. Stir in porridge oats a little at a time followed by fruit and chocolate.
  5. Spoon mixture into the tray and flatten down.
  6. Put it into the oven on the middle shelf and cook for 30 minutes.
  7. Once cooked cut into 24 squares immediately then leave in the tray to cool.
  8. Once completely cooled place them in a suitable container and store at room temperature.
