Apple and Matzo Pudding

    This is a straightforward recipe that includes the classic ingredients of matzo and cinnamon. Make it in advance and keep refrigerated for up to 2 days.

    Serves: 8 

    • 6 large matzo breads
    • 5 eggs
    • 200g sugar
    • 450ml apple juice
    • 100g melted margarine
    • 3 tablespoons cinnamon
    • 4 apples, peeled, cored and roughly diced
    • 100g sultanas
    • sliced strawberries and icing sugar, to garnish

    1. Preheat the oven to 180 degrees C.
    2. Break the matzos into bite size pieces. Soak until soft. Drain and squeeze dry. Reserve.
    3. Whisk the eggs with the sugar. Add the apple juice, margarine and cinnamon. Stir in the apples, sultanas and soaked matzo. Pour into a large casserole dish. Bake for 40 minutes or until set.
    4. To serve dust the plate with icing sugar and garnish with sliced strawberries.


    Matzo is a cracker like unleavened bread made from white plain flour and water.
