Spiced Apple Jam

    This apple jam includes allspice and nutmeg to give it a more autumnal feeling. You can leave the spices out and it's still great if you prefer.

    Serves: 50 

    • 1 kg apples, peeled, cored and diced
    • 1 cup (250ml) water
    • 1 tablespoon lemon juice
    • 2 (13g) sachets pectin
    • 7 cups (1 3/4 kg) caster sugar
    • 1/2 cup (100g) brown sugar
    • 2 teaspoons ground allspice
    • 2 teaspoons ground nutmeg

    Preparation:45min  ›  Cook:15min  ›  Ready in:1hour 

    1. Sterilise jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.
    2. In a large saucepan combine apples, water and lemon juice. Cover and simmer for 10 minutes.
    3. Stir in pectin and bring to the boil then stir in the caster sugar and continue boiling and stirring uncovered for 1 minute; until sugar is dissolved.
    4. Remove from heat and stir in brown sugar, allspice and nutmeg.
    5. Quickly fill jars to within 1cm of the top. Wipe rims clean and top with lids. Process jars in boiling water for 10 minutes to seal.
