Watermelon Soup

    This refreshing cold soup makes a nice light lunch. Fresh watermelon is blended with capsicum, onion, cucumber and sherry vinegar for a smooth summer soup.

    Serves: 6 

    • 1kg watermelon, peeled and diced
    • 1 onion, diced
    • 1 green capsicum, diced
    • 1 red capsicum, diced
    • 3 cloves of garlic, crushed
    • 200g bread, slightly stale
    • 1 cucumber, roughly diced
    • 2 tablespoons olive oil
    • 2 tablespoons sherry vinegar
    • 1 pinch salt and pepper, to taste

    1. Reserve a few pieces of watermelon for garnish.
    2. Put the watermelon, onion, capsicum, garlic, bread and cucumber in a blender. Blend until smooth. Stir in the olive oil, vinegar and season to taste.
    3. Serve cold in a cup topped with the remaining finely diced pieces of watermelon.
