This refreshing cold soup makes a nice light lunch. Fresh watermelon is blended with capsicum, onion, cucumber and sherry vinegar for a smooth summer soup.
1kg watermelon, peeled and diced
1 onion, diced
1 green capsicum, diced
1 red capsicum, diced
3 cloves of garlic, crushed
200g bread, slightly stale
1 cucumber, roughly diced
2 tablespoons olive oil
2 tablespoons sherry vinegar
1 pinch salt and pepper, to taste
- Reserve a few pieces of watermelon for garnish.
- Put the watermelon, onion, capsicum, garlic, bread and cucumber in a blender. Blend until smooth. Stir in the olive oil, vinegar and season to taste.
- Serve cold in a cup topped with the remaining finely diced pieces of watermelon.
