Mackerel with Capsicum

    Mackerel fillets are baked then served with roast capsicum and onion. If you can't find fresh mackerel, smoked mackerel is a good alternative.

    Serves: 6 

    • 3 green capsicums, deseeded and halved
    • 3 red capsicums, deseeded and halved
    • 3 cloves of garlic
    • 2 onions, cut into wedges
    • 6 fresh mackerel fillets
    • 3 tablespoons olive oil
    • 1 bay leaf
    • 1 pinch salt and black pepper, to taste

    1. Preheat the oven to 200 degrees C.
    2. Place the capsicums, garlic and onion in a roasting dish. Drizzle with a tablespoon of oil and roast for 45 minutes.
    3. Place the capsicum in a bowl then cover with plastic wrap and leave to cool. When cool enough to handle peel and cut into strips.
    4. Place the mackerel fillets on a baking tray and drizzle with a little oil. Bake for 10 minutes or until cooked. Leave to cool.
    5. Place the mackerel, capsicum, garlic and onions into a large bowl. Add the bay leaf, remaining oil, salt and pepper. Refrigerate for an hour until ready to serve.
