This all butter Madeira cake is the perfect all purpose cake. It has a firm texture making it ideal for cake decorating and parties.


Serves: 24 

  • 1 3/4 cups (400g) sugar
  • 440g butter
  • 2 1/2 cups (450g) plain flour
  • 7 eggs
  • 1/4 cup (60ml) milk
  • 2 teaspoons vanilla essence

  1. Preheat oven to 180 C. Gease a 20cm baking tin.
  2. Cream butter and sugar until pale and fluffy.
  3. Add in eggs and vanilla gradually until combined. Sift in flour while mixing then add milk continuing to mix until loose but not runny.
  4. Pour batter into prepared baking tin and bake for about 20 to 30 minutes until it is golden and firm in the centre.
