    This all butter Madeira cake is the perfect all purpose cake. It has a firm texture making it ideal for cake decorating and parties.

    Ingredients
    Serves: 24 

    • 1 3/4 cups (400g) sugar
    • 440g butter
    • 2 1/2 cups (450g) plain flour
    • 7 eggs
    • 1/4 cup (60ml) milk
    • 2 teaspoons vanilla essence

    Directions
    Preparation:10min  ›  Cook:30min  ›  Extra time:40min  ›  Ready in:1hour20min 

    1. Preheat oven to 180 C. Gease a 20cm baking tin.
    2. Cream butter and sugar until pale and fluffy.
    3. Add in eggs and vanilla gradually until combined. Sift in flour while mixing then add milk continuing to mix until loose but not runny.
    4. Pour batter into prepared baking tin and bake for about 20 to 30 minutes until it is golden and firm in the centre.

    Just made this cake. It has been in the oven cooking for about an hour now and is still uncoiled in the middle. Got the oven at the right temperature and the cake is in a 8" tin. Hope it's worth it in the end. Don't know how anyone else has managed to get it to cook in 20-30 mins?!  -  07 May 2011  (Review from Allrecipes UK & Ireland)
