Easy Sweet and Sour Meatballs

    This is a wonderful and quite subtle sweet and sour meatballs dish. If you use vegetarian meatballs the dish is vegetarian.

    Serves: 2 

    • 1 bag (about 25) meatballs
    • 1 carrot, julienned
    • 1 large onion, julienned
    • 1 clove garlic
    • 1 small red capsicum, julienned
    • 1 tablespoon brown sugar
    • 1 tablespoon gin
    • 2 tablespoons red wine vinegar
    • 3 tablespoons tomato ketchup
    • 1 tablespoon soy sauce
    • 1 small tin pineapple pieces in juice
    • 2 serves rice or Asian noodles (your choice)
    • 1 tablespoon cornflour

    1. In a large fry pan cook meatballs and carrots for 5 minutes. Add onion, garlic and red capsicum to frypan and cook until softened.
    2. In a small saucepan put sugar, gin, red wine vinegar, tomato ketchup, soy sauce and pineapple. Stir thoroughly and heat on a low heat until slightly simmering.
    3. While vegetables and sauce are cooking, cook rice or noodles according to instructions on the packet.
    4. When sauce is simmering, add cornflour (dissolved in a 2 tablespoons water) to sauce to thicken. Allow to simmer slowly until thickened and then take off the heat.
    5. Add sauce to fry pan and stir through. Serve with the rice or noodles.
