Cranberry Raspberry Red Wine Sauce

    This is a wonderful Christmas sauce for the roast. It goes well with turkey, chicken or any meat really.

    Serves: 10 

    • 375g cranberries
    • 250g raspberries
    • 250ml red wine
    • 150g caster sugar

    Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Put cranberries, raspberries, red wine and sugar in a large saucepan. Bring to a boil, stirring occasionally. Use a whisk to mash the cranberries. Turn down heat and let simmer for 15 minutes. Pour sauce into a container and refrigerate. It can be served hot or cold.

    Used different ingredients. We substituted apple juice for the merlot, it's cheaper and the sauce turned out great. It went well with our turkey, and the children even liked it because it wasn't as bitter as traditional cranberry sauce.  -  21 Jul 2008

    This is a good sauce for Boxing Day sandwiches, pork and probably chicken. My only tip is that you needn't worry about mashing the cranberries, they do that all by themselves. As they simmer, they pop. The dish comes out a gorgeous colour. If you want colour at your Christmas table, this dish will provide that!  -  21 Jul 2008
