Potato Pancakes With Sour Cream and Chives

    This a great and simple side dish recipe for potato pancakes with sour cream and chives. It can be eaten for breakfast alongside eggs and bacon or as a stand-alone dish.

    Serves: 4 

    • 4 medium potatoes, peeled and halved
    • 1 pinch salt
    • 30g plain flour, plus extra for dusting
    • 1 tablespoon melted butter
    • 1/4 cup sour cream
    • 1/4 cup chopped chives

    1. Cook the potatoes until very soft, about 20 min, drain and allow to dry. Add the flour, salt and melted butter. Mix into a dough and knead lightly on a well-floured surface.
    2. Flour a rolling pin and roll out into a circle about 7mm thick and about 22 cm wide. Cut into quarters using a floured knife.
    3. In a large frypan, well-floured, cook the potato pancakes for about 3 min on each side until browned. Serve with sour cream and chives, salt and pepper to taste
