Porcupine Meatballs with Rice

    These are called porcupine meatballs because you include raw rice in the meatball mix. After they are cooking in tomato pasta sauce the rice is cooked and the sauce is flavoured.

    Serves: 6 

    • Meatballs
    • 500g beef mince
    • 125g uncooked white rice (rinse the rice under warm water to wash off some of the starch)
    • 1 large onion: 1/2 minced and 1/2 sliced
    • 50g breadcrumbs
    • 1 tablespoon Worcestershire sauce
    • 1 egg, beaten
    • 1/2 teaspoon garlic powder
    • 1 tablespoon dried oregano
    • salt and pepper to taste
    • Sauce
    • 1 bottle (4-500g) of tomato pasta sauce
    • 1/2 cup (125ml) water

    1. Preheat oven to 200 degrees C.
    2. Mix the mince, rice, minced onion, breadcrumbs, Worcestershire sauce, egg and seasonings into a large bowl.
    3. Form the mince mixture into 4cm size balls and place into a medium sized baking dish.
    4. In a smaller bowl mix the tomato sauce and water together. Pour over the meatballs. Add the sliced onion on top.
    5. Cook for 1 hour 45 mins to 2 hours or until the meatballs are fully cooked and browned and the sauce has thickened.
    6. NOTE: If the sauce looks too thick, add another 60ml of water halfway through the cooking.

    My Mum used to make these so I was overjoyed to find the recipe. I made my own pasta sauce with ham, mushroom, tomato, garlic and herbs but the meatballs were kind of bland. COuld this be that I used leftover cornbread for the breadcrumbs or I needed a larger onion? Maybe, I will try again.
