Our Family Meatloaf

    This recipe is delicious and I have great fond childhood memories of it. It has two types of mince, lots of flavour and a rolled oats and tomato sauce based topping. It freezes well too.

    Serves: 6 

    • Meatloaf
    • 250g lean beef mince
    • 250g sausage mince (or that amount of sausages and take the skins off)
    • 1/2 onion, finely chopped
    • 1 teaspoon crushed garlic
    • 1 egg
    • 1/2 carrot, grated
    • 2 tablespoons chopped parsley
    • 1 teaspoon mustard
    • 1 teaspoon mixed herbs
    • 1/2 teaspoon salt
    • pinch black pepper
    • Topping
    • 4 tablespoons rolled oats
    • 2 tablespoons brown sugar
    • 4 tablespoons tomato sauce
    • 2 tablespoons chopped fresh parsley

    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 190 degrees C.
    2. Combine all meatloaf ingredients in large bowl and mix well. Press mixture into a loaf tin. Mix all of the topping ingredients into small bowl and spread evenly over the meatloaf mixture. Cover with foil and bake for 15 minutes then remove the foil and bake for a further 20-25 minutes until the meat is cooked and juices run clear.
    3. If you wish, make gravy with any juices left over after you remove the meatloaf. Add a couple of teaspoons of flour and put the loaf tin on low heat on a hotplate, whisk any lumps out until thickened. Serve with mashed potato and fresh green veggies.

    Cook's note

    I do double the quantity and freeze one loaf.
