Adobo Chicken Breast

    This is a native Philippine dish that I make with chicken breast and corn and capsicum and a slightly thicker sauce than usual. Serve on a bed of rice. Once you have tried it as below, try substituting the water for a can of coconut milk.

    Serves: 6 

    • 1 kg chicken breast fillets
    • 100g baby corn
    • 2 capsicums (red and green work well)
    • 2 bay leaves
    • 450ml water
    • 125ml rice vinegar
    • 1 tablespoon soy sauce
    • 1/2 teaspoon black pepper
    • 1 clove garlic
    • 1 level tablespoon of cornflour

    1. Slice the corn length ways and chop the capsicums into strips.
    2. Place the capsicums, corn, bay leaves, water, rice vinegar, soy sauce and black pepper in a medium pot. Heat and leave to simmer.
    3. Chop up the chicken and the whole clove of garlic. Fry together until cooked.
    4. Transfer the chicken and garlic into the same saucepan as the veggie mix and simmer for 15 mins.
    5. Mix the cornflour with half a cup of cold water and stir into the dish. Serve when ready.
