Bring water to boil, add rice. When water returns to a boil, reduce temperature to low. Cover rice and cook until rice is tender.
Cut ends from zucchini and steam until tender. keep one zucchini for garnish then dice the rest of them. Grease a 20x30cm baking dish.
Combine butter and oil in a large pot and heat until butter is melted. Add rice and diced zucchini, then saute until golden, stirring frequently. Stir in the cheeses until melted and add salt and pepper to taste. Let cool slightly, then stir in eggs quickly. Pour into a prepared baking dish and sprinkle generously with breadcrumbs.
Slice the remaining zucchini and arrange around the top then drizzle melted butter all over.
Grill under a medium grill until lightly browned and bubbly.
This was a disaster for me..... not sure what went wrong, but I couldn't saute the rice and zucchini, then it just got all gluggy...... and as for grilling until it became brown and bubbly NAHHH! Put it in the oven. Not sure how it tastes yet - it's still cooking. - 30 Apr 2011
