    A nice side dish of zucchini with pecans fried in butter. Tatsy as is but add some chopped garlic and salt if you like. Also use oil instead of butter and make it vegan.

    Serves: 2 

    • 3 tablespoons butter
    • 1/3 cup chopped pecans
    • 500 zucchini, sliced
    • 1 tablespoon grated Parmesan cheese

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a large frypan, melt 1 tablespoon butter over medium heat. Add pecans; cook and stir until lightly browned, about 5 minutes. Remove pecans from frypan.
    2. Add remaining 2 tablespoons butter to the frypan, and melt. Add zucchini, and fry until soft. Toss with pecans and cheese. Serve.
