    This is a piquant salad dressing for anyone who loves garlic. Balsamic vinegar can be substituted for red wine if you prefer.

    Serves: 12 

    • 4 cloves garlic, minced
    • 2 tablespoons Dijon mustard
    • 1/3 cup (85ml) red wine vinegar
    • 1 cup (250ml) extra-virgin olive oil
    • 1 pinch salt and ground black pepper to taste

    1. Combine the garlic, mustard and vinegar in a bowl; mix well. Slowly drizzle in the olive oil, constantly whisking until the dressing is thick; season with salt and pepper.
