Sundried Tomato and Basil Salad Dressing

This is a delicious mixed dressing for a simple green salad. As a variation you can serve it warm over spinach.


Serves: 20 

  • 1 cup (250ml) olive oil
  • 1/2 cup (125ml) balsamic vinegar
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup fresh basil leaves, sliced
  • 1/3 cup pine nuts, chopped
  • 2 tablespoons water
  • 1/8 teaspoon white sugar

Preparation:15min  ›  Extra time:8hours chilling  ›  Ready in:8hours15min 

  1. In a bowl mix the olive oil, balsamic vinegar, sundried tomatoes, basil, pine nuts, water and sugar. Cover and refrigerate 8 hours, or overnight.
