Savoury Tomato Soup

Homemade tomato soup is much better than the canned product. It's not hard to make and you can adjust the seasonings to suit.


Serves: 4 

  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1/4 cup minced onion
  • 1/4 cup tomato paste
  • 1 litre chicken stock
  • 1 cup diced tomatoes
  • 2 teaspoons dried basil
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon dried thyme
  • 1/4 cup (65ml) dry white wine
  • 1 bay leaf

  1. In a large saucepan over medium heat, cook garlic and onion in oil until onion is translucent. Stir in tomato paste and cook until the colour is rusty. Pour in chicken stock and stir in tomatoes, basil, marjoram, oregano, thyme, bay leaf and wine. Bring to a boil then reduce heat and simmer 30 minutes.
