    Fresh asparagus is delightful in the spring, but have you ever tried it in a sandwich? Shaved parmesan and butter lettuce complete the creation.

    Ingredients
    Serves: 6 

    • 1 bunch asparagus, trimmed and cut in half
    • 1/3 cup (85ml) water
    • 12 slices French bread, sliced on the diagonal
    • 65g butter
    • 1/3 cup mayonnaise
    • 1/3 cup (45g) shaved parmesan cheese
    • 12 butter lettuce leaves
    • 1 dash freshly ground black pepper to taste

    1. Place the asparagus and 1/3 cup water in a microwave-safe bowl. Cook in the microwave on High 1 minute or just until tender. Rinse under cold water and blot dry with paper towels.
    2. Spread 1 side of 6 bread slices with 1/4 teaspoon butter and about 1 tablespoon mayonnaise each. Layer with asparagus and sprinkle with parmesan cheese. Place lettuce over the asparagus, season with pepper and top with remaining 6 bread slices to form 6 sandwiches.
