Slow Cooker Bananas in Rum

    This is a dessert recipe for the slow cooker that goes well with vanilla ice cream, pancakes and waffles. 1 teaspoon rum essence may be substituted for 1/4 cup rum.

    Ingredients
    Serves: 4 

    • 4 bananas, peeled and sliced
    • 4 tablespoons butter, melted
    • 1 cup (155g) packed brown sugar
    • 1/4 cup (65ml) rum
    • 1 teaspoon vanilla essence
    • 1/2 teaspoon ground cinnamon
    • 1/4 cup (30g) chopped walnuts
    • 1/4 cup shredded coconut

    Directions

    1. Layer sliced bananas in the bottom of a slow cooker.
    2. Combine butter, brown sugar, rum, vanilla and cinnamon in a small bowl; pour over bananas.
    3. Cover and cook on Low for 2 hours. Top bananas with walnuts and coconut during the last 30 minutes of cooking.

    I don't have a slow cooker but not necessary. Melt butter, sugar, vanilla and cinnamon in oven proof dish, add bananas and cook in medium oven (160*) until soft, then stir in rum , walnuts and half a cup of cream - YUM!!!  -  27 Aug 2012

    This is not good and I'll tell you why. The banana's in Bananas Foster are suppose to stay somewhat firm and not turn to mush. They shouldn't turn brown. The caramel sauce is really good though, so that alone gets the two stars.  -  11 Jun 2008  (Review from Allrecipes USA and Canada)

    Fantastic! Hubby and I both loved it and I'll be making it again! I followed the recipe exactly except I omitted the coconut, and it's a must to serve with a little vanilla ice cream. It really smoothes out the flavor, just irresistable. I uploaded a photo of mine. It actually got cooked 1/2 hour or so longer before we got to dig in and was just fine, just remember to stir a little so that it doesn't get stuck on the edges or dried out.
