Baked Polenta Pudding

This is comfort food - polenta baked with molasses, ginger and cinnamon. You can add sultanas or nuts if you wish.

Serves: 4 

  • 3 cups (750ml) milk
  • 1/3 cup polenta
  • 1/4 cup (90g) dark molasses
  • 1/4 cup (60g) white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon

  1. Preheat oven to 140 degrees C. Butter a 1 litre baking dish.
  2. In a large saucepan over medium heat, heat milk until bubbles form at edges. Slowly stir polenta and molasses into milk. Continue to cook and stir until thickened, about 10 minutes. Remove from heat and stir in sugar, salt, ginger and cinnamon. Pour into prepared dish.
  3. Bake in preheated oven 2 hours until set. Serve hot or cold.

Still in the oven, it's not completely set after 2 hours and 5 minutes.....I'm leaving it in for another 5 mins.....I followed the recipe to the letter! - 22 Dec 2014
