Chicken Breast Rolled with Ham and Cheese

An unusual and delicious way to prepare chicken - rolled up with ham and Swiss cheese, crumbed and cooked quickly in the microwave.


Serves: 6 

  • 4 skinless, boneless chicken breast fillets, pounded to 5mm thickness
  • 125g Swiss cheese slices
  • 125g ham, sliced thin
  • 2 tablespoons grated parmesan cheese
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried basil leaves
  • 1 tablespoon butter, melted
  • 1/3 cup (45g) dry bread crumbs

  1. Place chicken breasts on a baking tray. Place Swiss cheese and ham slices on top and roll up, securing with toothpicks if necessary. In a small bowl combine the parmesan cheese, paprika, garlic salt, tarragon, basil and bread crumbs. Mix together and dip chicken rolls in mixture to coat.
  2. Drizzle with melted butter and cook on High in microwave for 4 minutes, or until chicken is cooked through and juices run clear.
