Almond and Pine Nut Biscuits
These macaroons are made with marzipan instead of the usual coconut and are rolled in pine nuts for a crunchy shell.

- 500g marzipan
- 1 1/4 cups (280g) white sugar
- 4 egg whites
- 4 cups (625g) pine nuts

- Preheat oven to 180 degrees C. Grease baking trays.
- Break marzipan into pieces and mix together with sugar, using your hands to crumble paste. In a separate bowl, separate the eggs and beat the whites into soft peaks. Slowly add to marzipan mixture and mix until just blended.
- Place pine nuts in a bowl. Roll dough into 3cm balls and press into nuts. Coat evenly and place on baking trays about 3cm apart.
- Bake 15 to 17 minutes, until lightly golden. Let cool on baking trays for 5 minutes, then transfer to racks.

I grew up with these cookies at every christmas, they have always been my favorite cookies, ive only just started to bake them myself but they are very easy to make.
