A real banana bread for those that don't want a sticky wet quick cake recipe. You'll get a better flavour from this banana bread and no need to mash the bananas...the bread machine will mash them as it mixes the bread.


Serves: 16 

  • 1 cup (250ml) milk, room temperature
  • 2 tablespoons butter, softened
  • 2 ripe bananas
  • 3 1/2 cups (425g) plain flour
  • 2 tablespoons white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 1/2 teaspoons active dry yeast or bread machine yeast
  • 1/2 cup (90g) sultanas
  • 1/2 cup (60g) walnuts

Preparation:5min  ›  Cook:2hours50min  ›  Ready in:2hours55min 

  1. Place the milk, butter, bananas, flour, sugar, salt, cinnamon and yeast in the bread machine in the order recommended by the manufacturer.
  2. Select Basic setting; press Start.
  3. If your machine has a Fruit/Nut setting add the sultanas and walnuts at the signal or around 5 minutes before the kneading cycle has finished.

Lovely recipe. I had three large bananas, so had to upscale the flour a bit. Also, had no walnuts so added more fruit, in my case raisins. The result was a light tasty irresistible sweet loaf. Thank you. - 23 Apr 2015


Delicious bread! I added less milk, a small egg and substituted vanilla instead of cinnamon, brown sugar instead of white. Soooo good - 21 Mar 2014
