    A quick and easy egg dish. It contains the unusual ingredient of the tortillas being in the egg, rather than the egg being on the torillas.

    Serves: 4 

    • 6 eggs
    • 1/4 cup (65ml) milk
    • 3 (15cm) corn tortillas, coarsely diced
    • 1 tablespoon butter
    • 1 tablespoon diced spring onion
    • 1/2 cup diced cooked ham
    • 1 pinch salt and pepper, to taste

    1. In a bowl whisk eggs and milk together. Soak tortilla pieces in egg mixture for 5 to 10 minutes..
    2. Meanwhile heat butter in a frypan over medium heat. Saute spring onion and ham until onion is soft; about 5 minutes
    3. Pour egg mixture into frypan and cook over medium/low heat until eggs are set.
