Microwave Bread Pudding

A simple bread pudding that is made in the microwave. Extra taste from the cinnamon and vanilla mixed into the custard.


Serves: 6 

  • 16 thick slices fruit loaf bread, cubed
  • 1/2 cup (90g) white sugar
  • 1 pinch ground cinnamon
  • 2 cups (500ml) milk
  • 65g butter
  • 5 eggs, whisked
  • 1/2 cup (90g) white sugar
  • 1 teaspoon vanilla essence

  1. Line a microwave safe 2 litre ring mould or baking dish with fruit loaf bread. Sprinkle sugar and cinnamon evenly over bread cubes. Set aside.
  2. Place milk and butter in a glass jug and microwave on medium 4 to 6 minutes until butter is melted and milk is scalded.
  3. Quickly stir eggs, 1/2 cup sugar and vanilla into hot milk mixture. Pour over bread cubes.
  4. Cover with plastic wrap and microwave at medium heat for 17 to 19 minutes; until pudding is set.
