    This very simple recipe for mango coconut cream sauce has a dash of lime. It can be served over barbecued chicken with rice or egg noodles

    Serves: 6 

    • 2 mangoes, peeled, seeded and cut into 2cm chunks
    • 3/4 cup (185ml) coconut milk
    • 3/4 cup (185ml) thickened cream
    • 2 tablespoons fresh lime juice

    Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Place the mangoes into a blender and blend until smooth.
    2. Pour the mango puree, coconut milk, cream and lime juice into a saucepan and blend thoroughly.
    3. Bring to a boil over medium heat. Serve immediately.
