Roasted Potatoes with Parmesan

What is a great roast dinner without great roast vegetables? This is a simple recipe that has spectacular results for an old favourite.


Serves: 6 

  • 750g unpeeled potatoes, cut into 2cm chunks
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 1/4 teaspoon dried thyme leaves

  1. Preheat an oven to 200 degrees C.
  2. Place the potatoes into a mixing bowl and drizzle with olive oil. Sprinkle with salt, black pepper, parmesan cheese and thyme leaves. Toss to evenly coat then transfer to a 23x33cm baking dish.
  3. Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork; about 1 hour. Serve hot or at room temperature.
