Jimmi and Claire's Triple Chocolate Chip Biscuits

My girlfriend and I over the past year have made a wide selection of biscuits. We have tried and tested a whole range of recipes, and this combination of ingredients I adapted and made is by far the best!!!! Definitely for a sweet tooth!!

Ingredients
Serves: 12 

  • 220g butter
  • 1½ cups white sugar
  • 2½ tablespoons soft brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2½ cups self raising flour
  • pinch salt
  • 155g milk chocolate chips
  • 155g white chocolate chips
  • 155g dark chocolate chips

Directions
Preparation:14min  ›  Cook:12min  ›  Ready in:26min 

  1. Preheat the oven to 180C.
  2. Cream together the butter, white and soft brown sugar then mix in the eggs and vanilla essence. Mix well, sieve in the flour and salt gradually and stir.
  3. Refrigerate mixture for 15 minutes then stir in all of the chocolate chips. Use a teaspoon to place the mixture on ungreased biscuit trays.
  4. Bake for 10- 14 mins (depending on the size on each biscuit). Allow them to cool on the tray for 5 minutes, then transfer to wire rack for a further 5 minutes.
