This is a spicy and extremely flavourful recipe that is an Indian style sheekh kebab. It is a nice addition to the standard barbecue.
1kg lean lamb mince
2 onions, finely diced
1/2 cup fresh mint leaves, finely diced
1/2 cup coriander, finely diced
1 tablespoon ginger paste
1 tablespoon green chilli paste
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons paprika
1 teaspoon cayenne pepper
2 teaspoons salt
1/4 cup (60ml) vegetable oil
- In a large bowl mix lamb mince, onions, mint, coriander, ginger paste and chilli paste. Season with cumin, coriander, paprika, cayenne and salt. Cover and refrigerate for 2 hours.
- Mould about 1 cup at a time of the lamb mixture to form sausages around skewers. Make sure the meat is spread to an even thickness. Refrigerate until you are ready to barbecue.
- Preheat barbecue for high heat.
- Brush the plate liberally with oil and arrange kebabs on it. Cook for 10 minutes or until well done; turning as needed to brown evenly.
