Cucumber Salad with Lime and Chilli

    Such a simple salad with so many great flavours! Cucumbers chopped and seasoned with lime, chilli, salt and coriander make a great Asian style side dish.

    Serves: 3 

    • 2 cucumbers
    • 2 tablespoons fresh lime juice
    • 1 teaspoon chilli powder
    • 1/4 teaspoon salt
    • small handful chopped fresh coriander

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Peel cucumbers, slice lengthwise into quarters, and cut into small pieces; place in large bowl. Sprinkle with lime juice, chilli powder and salt; toss. Toss with coriander. Refrigerate until chilled.

    Nice and easy accompaniment to a meal. Since I don't like too much chili powder, I cut the amount in half. My husband thought it had a tad too much cilantro, but I love cilantro so it was fine for me. (Fresh, not dried, cilantro is a must!)     awesome, awesome, awesome. for those of you who like flavor!!! i read the other reviews and put less chili powder like people suggested... big mistake. i made it again & doubled the chili powder & it knocked my socks off! definitely let it marinate long though. i recommend at least 4 hours. good when it's hot outside!  -  25 Jun 2002  (Review from Allrecipes USA and Canada)
