Chocolate Cream Cheese Fudge

    This fudge has a cream cheese base and loads of sugar and chocolate to make a wonderful sweet indulgence.

    Serves: 64 

    • 185g cream cheese, softened
    • 1 pinch salt, to taste
    • 1/2 teaspoon vanilla essence
    • 4 cups (700g) icing sugar, sifted
    • 125g dark cooking chocolate, melted and cooled
    • 1 cup chopped walnuts

    Preparation:15min  ›  Cook:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour20min 

    1. Line an 20x20cm tray with foil.
    2. In a medium bowl beat cream cheese until smooth.
    3. Mix in salt and vanilla until combined then mix in icing sugar, a little at a time, until smooth.
    4. Stir in melted chocolate then fold in walnuts.
    5. Spread into prepared tray then chill 1 hour until firm. Cut into squares.

    Absolutely perfect. Only took about ten minutes. I made one batch with regular cream cheese one with light. I warmed my cream cheese in the microwave and added vanilla and salt to cream cheese along with actually UNSIFTED powdered sugar. I used the 3% cornstarch kind that may have helped. While I was prepared to add butter or milk I used my choclate right off the burner and did not need any added ingredients. By using everything warm and adding the chocolate very last I was putting it in the pan right as it began to firm up. I used the back of a spoon and hot water to smooth the top.     This is wonderful fudge! While I was making it, I added a bit of butter with melting the chocolate and also 1/4 cup milk to the mix. I did this to avoid the stiff mixture problem.
