Use this slightly spicy, flavoured butter for barbecued steak or corn. You can use it during or after the cooking. It's also good on baked potatoes.

Serves: 8 

  • 125g unsalted butter, softened
  • handful chopped fresh coriander
  • 3 teaspoons lime juice
  • a pinch chilli flakes
  • salt to taste

Directions
Preparation:5min  ›  Cook:1hour  ›  Ready in:1hour5min 

  1. In a mixing bowl, cream butter. Mix in coriander, lime juice and chillies. Season with salt to taste. Cover and chill for at least 1 hour. Use that day.
