This coleslaw has almost every colour of the rainbow in it with fresh ingredients like red cabbage, carrots, capsicum and coriander.

Serves: 8 

  • 1/2 medium head green cabbage, shredded
  • 1/2 medium head red cabbage, shredded
  • 1 red capsicum, thinly sliced
  • 1 yellow capsicum, thinly sliced
  • 1 red onion, thinly sliced
  • 2 carrots, grated
  • handful chopped fresh coriander
  • 8 tablespoons olive oil
  • 4 tablespoons lime juice
  • 1/2 teaspoon ground cumin
  • 2 cloves garlic, crushed
  • 1 tablespoon Tabasco, or to taste
  • salt and freshly ground black pepper to taste

  1. In a large bowl, combine green cabbage, red cabbage, red capsicum, yellow capsicum, red onion, carrots and coriander. In a small bowl, mix together olive oil, lime juice, cumin, garlic and Tabasco. Toss dressing with cabbage mixture until evenly coated. Season with salt and pepper. Let stand 30 to 60 minutes before serving.

Altered ingredient amounts. Lately I have begun to use 1/4 cup of olive oil instead of a 1/2 cup, Key Lime Juice instead of regular lime juice and twice the hot sauce. - 29 Sep 2008


This is the tastiest coleslaw I've ever made ...and I thought I made great coleslaw before. The dressing is exceptional. Don't switch out the coriander if you aren't a fan. That's the key flavour ingredient with the amazing dressing. - 05 Nov 2015
