Tarragon Vinaigrette

    This is a complex flavoured salad dressing flavoured with celery salt, Dijon mustard, tarragon and mustard seed.

    Serves: 14 

    • 1 tablespoon Dijon mustard
    • 2 tablespoons white sugar
    • 1/3 cup (85ml) white vinegar
    • 1 clove garlic
    • 1 teaspoon salt
    • 1/3 cup (85ml) vegetable oil
    • 3/4 cup (190ml) water
    • a good pinch of celery salt
    • a good pinch of red chilli flakes
    • 1/2 teaspoon freshly ground black pepper
    • 3/4 teaspoon dried tarragon
    • 3/4 tablespoon mustard seed

    1. Place the Dijon mustard, sugar, vinegar, garlic clove and salt into a blender. Cover, and puree until the garlic has blended smooth.
    2. With the blender running, pour in the vegetable oil alternately with the water; blend until thick and creamy.
    3. Add the red chilli flakes, celery salt, black pepper, tarragon, and mustard seed; pulse until the spices are evenly distributed.
