Ciabatta Bruschetta

    One of the best things you can do when you get your hands on some good fresh Italian bread is make a simple bruschetta with basil and tomatoes.

    Serves: 10 

    • 10 slices ciabatta or any Italian bread
    • 1 tablespoon (approx) extra virgin olive oil
    • 4 roma tomatoes, diced
    • handful chopped fresh basil

    Preparation:15min  ›  Cook:3min  ›  Ready in:18min 

    1. Preheat the grill.
    2. Cover a medium sized baking tray with a single layer of bread slices. Brush the slices with olive oil.
    3. In a mixing bowl, combine the tomatoes, olive oil and basil. Mix thoroughly so that the juices from the tomato are released. Add salt, if desired, to help this process.
    4. Place bread under grill until lightly browned. Remove from grill and top with the tomato mixture.

    Used different ingredients. add finlely chopped red onion to the tomato, and a splash of olive oil and balsmaic vinegar, also crumbled fetta if desired  -  06 Apr 2010


    Used different ingredients. Excellent! I sprinkled some mozzarela cheese on top and cooked them on the BBQ! Delicious!  -  29 Sep 2008


    Altered ingredient amounts. I thought it was pretty bland, so the next time, i doubled the basil, chopped up 2 garlic cloves and added it to the tomato mixture, then finished it off with some grated mozzarella on top. It got a much better reception from my husband the second time.  -  29 Sep 2008
