Gluten-Free Vegan Fruit Crumble

    A tasty, healthy, gluten-free crumble for winter evenings...or breakfast! It uses quinoa and coconut oil so you can have all the warming joy of a crumble without the dairy or gluten.

    Serves: 6 

    • 4 large cooking apples e.g. granny smiths
    • 1/2 cup raisins or other dried fruit
    • 1 tsp ground ginger
    • 1 tsp ground cinnamon
    • 1 cup quinoa
    • 1 cup coconut chips
    • 1 cup ground hazelnuts
    • 2 tbsp virgin coconut oil or butter

    1. Stew the apples, spices, and dried fruit until soft and well-done. Pre-cook the quinoa in 2 cups of water for around 15mins, drain off any excess water.
    2. Transfer cooked fruit mix to a large dish. Combine the quinoa, coconut chips, ground hazelnuts and coconut oil/butter and mix together well (i use my hands).
    3. Spoon the combined mixture on top off the fruit mix, ensuring even coverage, then bake in pre-heated oven until golden brown on top. Serve with cream, or milk, or on its own

    Use for leftovers

    Makes a good breakfast the next day
