Marinated Tomatoes and Mushrooms
Fan of both marinated mushrooms and marinated cherry tomatoes? This is for you. This is perfect as a salad, side or as part of an anitipasto platter.
Ingredients
Serves: 8
- 1/4 cup (60ml) balsamic vinegar
- 1/3 cup (80ml) olive or vegetable oil
- 1 1/2 teaspoons white sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 375g cherry tomatoes (about 1 1/2 punnets)
- 250g button mushrooms
- 2 spring onions, sliced
- a good handful of chopped fresh basil

- Mix together the balsamic vinegar, oil, sugar, salt and pepper in a bowl.
- Add the add the tomatoes, mushrooms, onions and basil; toss until evenly coated. Cover and chill in refrigerator at least 3 hours. Stir before serving.
