    Fan of both marinated mushrooms and marinated cherry tomatoes? This is for you. This is perfect as a salad, side or as part of an anitipasto platter.

    Ingredients
    Serves: 8 

    • 1/4 cup (60ml) balsamic vinegar
    • 1/3 cup (80ml) olive or vegetable oil
    • 1 1/2 teaspoons white sugar
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 375g cherry tomatoes (about 1 1/2 punnets)
    • 250g button mushrooms
    • 2 spring onions, sliced
    • a good handful of chopped fresh basil

    Directions

    1. Mix together the balsamic vinegar, oil, sugar, salt and pepper in a bowl.
    2. Add the add the tomatoes, mushrooms, onions and basil; toss until evenly coated. Cover and chill in refrigerator at least 3 hours. Stir before serving.

    So very easy and absolutely delicious. I took the makings (with dressing ready made) of this recipe camping and it was so quick and easy to whip up as part of our Christmas dinner!  -  18 Jan 2013

    We absolutely love this! Had it as a side one night and the next night I put it on fresh spinach with fresh mozzarella, and grilled chicken for a healthy salad. The sauce made a wonderful dressing for the salad.  -  27 Apr 2008  (Review from Allrecipes USA and Canada)
