Lime and ginger grilled chicken

    Super easy, super healthy and full of flavour, this grilled chicken is a winner every time! You can also barbecue it.

    Serves: 6 

    • 6 large chicken breasts
    • 3 limes
    • 3 jalapenos (optional)
    • 2 teaspoons grated ginger
    • 2 teaspoons crushed garlic
    • 2 teaspoons fresh lemon thyme
    • to taste salt + pepper

    1. Fillet the chicken breast length ways - this will make it much faster to cook all the way through
    2. Grate the zest from one lime and then juice all three
    3. Add the zest, juice and the rest of the ingredients into a bowl just large enough for all of the ingredients - this will help the juice to cover the chicken
    4. Leave covered in the fridge for at least 15 mins if you're in a hurry, or over night if you can Note: you'll notice the chicken slowly change color, this is the acid from the limes at work. no need to worry ;)
    5. Heat a griddle pan or the BBQ to a high heat and grill or bbq the chicken on each side until golden brown
    6. Serve with your favourite side - grilled veges, a garden salad or may be mashed potatoes!

    Freezing tip

    You can put the raw chicken breast into a freezer bag and cover with the marinade. Seal the bag and freeze for a fast meal idea from the freezer! Note: To cook, defrost in the microwave while the griddle is pre-heating then grill as normal.
