Spinach with Pasta

    Both my wife and I like to cook and this is one of my favourites. Quantities can be varied to taste and numbers.

    Serves: 2 

    • 250g pasta
    • 125g streaky bacon
    • 1 teaspoon chilli powder (or fresh)
    • 2cm ginger (grated)
    • 1 teaspoon (or more to taste) garlic
    • 500g spinach
    • pinch salt and pepper
    • grated Parmesan cheese

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Put pasta on to boil in salted water and cook to taste.
    2. Cut bacon into small pieces and fry in oil till crispy, add chilli, ginger, garlic.
    3. Sweat or boil spinach till cooked to taste, season with salt and pepper.
    4. Drain spinach and add to bacon, mix well.
    5. Drain pasta, add bacon/spinach mix and serve. Sprinkle with parmesan cheese.

    Thanks for this recipe! I wouldn't have thought to use ginger, but it works really well. I admit to skipping the chilli, adding chopped red capsicum, using baby spinach, and sneaking in a bit of sour cream, but the whole family complimented me on this one. I'm glad I followed your instructions to sprinkle parmesan on top at the end, it saved me from trying to melt cheese into the dish and making it too heavy (like I usually do).     Used different ingredients. I used 3 tsp of sweet chilli sauce instead of actual chili, was generous on the ginger and used about 3 cloves of fresh garlic (minced).  -  22 Sep 2010
